Chè bắp với màu vàng bắt mắt trên nền cốm màu xanh non rất bắt mắt. Không chỉ hấp dẫn vì màu sắc đẹp, món chè này còn là sự kết hợp hoàn hảo giữa mùi bắp thơm lừng và hương cốm mới. Thêm cái vị béo ngậy của nước cốt dừa giúp món chè thêm ngon.
Bắp rửa sạch, dùng dao bào mỏng. Cho cùi bắp vào nồi nấu cùng 2.5 lít nước để chè có vị ngọt và mùi thơm của bắp. Nấu cùi bắp khoảng 30 phút là được. Lá dứa rửa sạch, bó lại cho gọn rồi cho vào nồi. Sau đó cho bắp đã bào mỏng vào.
Nấu lên cho bắp sôi và nhớ hớt bọt bạn nhé. Cho 250gr đường vào nồi. Nấu đến khi bắp hơi mềm thì cho cốm vào. Nấu sôi lên lại vài lần nữa cho cốm chín.
Hòa tan bột năng với 1/2 chén nước. Cho bột năng vào chè. Cho từ từ từng chút bột năng, vừa cho vừa khuấy đều cho bột chín. Nấu sôi lại lần nữa đến khi bột chín và chuyển màu trong là được. Cho nước cốt dừa vào nồi, thêm 100gr đường và 1/2 muỗng cà phê muối, hòa tan cho đường tan hết. Nấu cho nước cốt sôi lên là hoàn thành.
Khi ăn nên để cho chè thật nguội. Lúc này chè sẽ dẻo ngon hơn. Chan nước cốt dừa lên trên nữa rồi thưởng thức thôi nào.
